Makin’ Whoopie (Pies)

There was a period of time where we made a lot of whoopie…pies. (har har)

They’re just SO tasty, and fun to make. And with such a variety of flavors, the options are endless! (Trust me…we’ve tried to make them all.)

The best still, though, are the classic version. A chocolate cake-ish sandwich, with marshmallow creme. Think a Moonpie, or a Double Doozie. Or, a Whoopie Pie!

Classic Chocolate Cake Recipe:

  • 1 2/3 Cup flour
  • 2/3 Cup unsweetened cocoa
  • 1 1/2 t baking soda
  • 1/2 t salt
  • 4 T unsalted butter
  • 4 T Crisco
  • 1 c dark brown sugar
  • 1 egg
  • 1 t vanilla
  • 1 c milk

Sift together the flour, cocoa, baking soda, and salt.

Cream the butter, crisco, and brown sugar. Add egg and vanilla. Add 1/2 cup of milk and 1/2 of the flour mixture. Mix together. Add remaining milk and flour mix.

On a parchment-lined baking sheet, scoop out batter with a 2-T ice cream scoop. Bake for 10 minutes at 375. Let cool on wire rack.

Classic Marshmallow Filling:

  • 1 1/2 cup Fluff (or marshmallow cream)
  • 1 1/4 cup Crisco
  • 1 c powdered sugar
  • 1 T vanilla

Cream together until fluffy.

Create sandwiches by dolloping marshmallow filling on one pie. Top with another. Eat within one day…so share with family and friends!
